Blackwater Zeitgeist Cinsaut 750ml

Dryland bushvine vineyard planted mid-1980’s in Darling, farmed sustainably. Harvested into 16.5kg crates, fermentation occurs in small open-vessels wholecluster component 40%-60% (vintage dependent), no additions of additives, daily punch downs for 2-3 weeks maceration. Drained and pressed with a basket press, settled for 3 days and racked to concrete egg. Majority aged in 1500L concrete egg, additional production aged in 300L French oak barrels.
